Very easy to do, very good choice.
The only Q is amount of power needed.
A 60 L diesel tank is == 80 kWh of electricity.
Any normal recreational user can or could charge the batteries from
solar, since useage is == 2% of year.
The only problem is, power needs are peak, ie high needs of energy, seldom.
Thus, if you need about 2 kWh typical, to get out of harbor, a small
battery will be fine.
A cat 30 needs about 1 kW-1.5 kW for 70%-80% hull speed, thus the 2 kWh
power budget is plenty.
Getting in/out of harbor is 20-30 min max, with 10 min reserve, and
another 20% extra for 2 kWh power budget.
There are different viewpoints.
Truth is once out of marina, a sailboat does not need an engine.
You may want one, for comfort and personal needs, but you dont really
need one.
Many people lived on, and circumnavigated without engines.
Thus engines =/= necessary.
For me, sailing is fun = recreation.
I can, could, would, immediately, circumnavigate without engine.
I *would not* do so without some engine, as engine == cheap vs. the
drawbacks in $ and maintenance (minimal).
I often use the engine a lot, because my sailing is limited in time, and
always done on rented yachts I bare-boat.
As an owner, I think it might be less.
In my area, slips are more expensive than renting yahcts upto 50 ft / 15 m.
A typical user can mount 4 330W PV panels, and these will give you all
the power you need.
4x330W PV, with == 6-8 kWh lion batteries.
