I've been talking (and emailing) John at Mars Motors. For what it's worth, he's a real class act to deal with. Very prompt and knowledgeable.
He shared with me some more information about the mars motor (the real spec sheet), and gave me permission to post it to the board.

The important things to note are that the performance curves were generated using a controller (specifically from Korun). Many of you have referenced this must be the case. The efficiency and current provided are those of the controller and the motor together. This finally solves the problem (for me anyhow) of how it's advertised as a 90% efficient motor, but the performance graphs show 80% efficiency. He also said the Sevcon controller is 2-3% more efficient.
