It isn't going to happen on plane. Your battery pack would sink the boat, even with the water ballast tank empty. The ParSun electric outboard would give you good range, but in displacement mode only. If you need the speed, one gallon of gas is 800lbs of battery...

Subject: [Electric Boats] Repowering Macgregor 26x
From how I understand it if I want to convert our Macgregor 26X from using a 40-70hp 2stroke to electric and still have good performance on the water the best option for us is to go diesel generator and high performance electric motor.
We prefer to raise the sails as much as possible, the outboard is for getting there, anyone who has ever been on the Myall river in NSW, Australia will know what I mean when I say one slow trip on that river is enough.
What would it take to get a Macgregor 26X to plane it's hull and for how long on battery/electric only.
