I've been curious on this also. I would guess if the controller is energized for a rpm that is slower than what the passing water has the prop spinning, then it should be charging. I'm certain you would get a better energy transfer with the Torqeedo mounted backwards so that the face of the prop is facing into the flowing water.

I'm the owner of a Torqeedo 503S which I mainly use for the propulsion of my tender.
I've however one question : what would happen if this engine was free wheeling behind my sailboat at a speed of around 6 to 8 knots ? Would it generate 12V DC or nothing because it has not been designed as a generator ?
