I did this project.
You need a center-tap pot. I used a 10,000 ohms 2 watt, wire-wound linear potentiometers, Part number 5905-258-6808 manufactured by Clarostat.
They aren't that common, but there's one listed on ebay as "New* 10K ohm Clarostat Potentiometer Center Tap".
It goes from 0 to 5k in each direction.
I started out with three cams made from large fender washers, epoxied onto the pot shaft. I'll try to post a pix.
