Agree with Pat. You may need a higher pitch prop for pushing a tiny boat at higher speeds. Overvolting the trolling motor with the stock prop might give you an impressive rpm but also more slip due to cavitation. You need to load the motor properly and operate not too far from the design rotational speed.
Just an unrelated point... if your trolling motor speed control is not of the PWM type, you will waste a lot of power at anything less than full throttle, unless you power it through an outboard PWM controller. These can cost a few hundred bucks for a super nice one, or around $40, even less , for a low power China Cheapie from fleabay. A trolling motor of whatever rated voltage, a 48v ebike battery pack, and a budget Asiatic Special controller, WITH THE RIGHT PROP, could give you a fairly efficient and inexpensive package for pushing a micro boat at a respectable speed. Without the correctly matched prop, it will work of course, but performance and or efficiency will maybe be a bit underwhelming.
If you will be pushing the power envelope, consider carrying a spare motor onboard. Since the actual motor is underwater it is kinda hard to overheat it but I bet a determined person could do it.
If you will be testing props, you will want an ammeter in series with the controller and battery to measure battery discharge current. Some way to measure rpms would be awesome, too. This could possibly be done acoustically. Maybe a hall effect tachometer if you do a good job of wet proofing it. The main thing of course is power consumption vs boat speed, but prop rpm could be interesting and useful data too.
I have just such a controller, and some 48v ebike battery packs, a cheap Newport trolling motor and a fiberglass pirogue waiting for me to get time to build my own micro-eboat project. One of these days when I am not working and not tinkering with my full size E-boat I guess.
