You write that you are considering an electric car as donor. I would recommend that you carefully look into pros and cons using parts from a car.
I was recommended to use a Think City as a donor, and I bought two of them. They where cheap, but they have also given me a lot of challenges.
The two biggest challenges has been: power transmission from the Siemens motor to the propeller shaft, and reprogramming the Siemens Simotion inverter. The first has been a challenge since the Siemens motor does have a shaft, but a "hole". But I believe that I have solved this now by using parts from the gearbox, and I am planning to have a mechanical workshop modify some parts.
But the reprogramming of the Simotion inverter has been very difficult. Remember that a motor in car must behave different from a motor in a boat. I.e.: in the Think there is reverse speed limit, and worst: the motor change rot. direction only for very low rpm. I got the right software (siadis), but still have not managed to make proper communication with the inverter :(
