Drill a very small pilot hole in the set screw, stepping up drill sizes to cut the screw out. Use fluid, have spare bits.
A thin cut-off wheel in an angle grinder is quick too. Make a gauge to avoid over cutting. Get close, then split the coupling off to keep the shaft sano. The depth gauge is key here, so the remaining coupling metal is thin as possible.
I spent hours trying to drill out and pull a coupling off a Cal 2-27 not long ago. After breaking my puller, I cut the coupling off. Compared to the hours of drilling and struggle, the angle grinder took less than three minutes. A replacement coupling was about $100, good to know before committing the original to scrap!

Set screws are harder than most drill bits, so drilling it out's not going to work. Is the shaft keyed? If so, then heating the coupling will cause it to expand and at the same time relieve the pressure from the set screw (which typically presses on the key, not the shaft), and you might be able to remove it off with a pulley puller.
Or, cut the shaft behind the coupler and attach the motor with a new coupler.
