You want to make up a series string for the desired voltage, for instance four 12V batteries wired in series to make a "48V" battery, and then parallel additional strings for the desired current.

All four batteries in each and all strings must be the same type, capacity and age in order to accept and deliver the desired charge.  Like size/capacity/age batteries in this fashion should not become significantly unbalanced in voltage and charge state.  However having the ability to periodically charge each battery individually helps to maintain equality. 

For many years I have had a large house bank in the boat of four 6V golf cart batteries wired 2 in series paralleled by another two in series.  I never saw more than a few millivolts difference between batteries.  But this was a moderate  current lead acid system and it may be different with the high current motor applications and/or with lithium.  I've no experience with that.
