A whole system is out there, including joy stick, designed to mount on the transom.  It's a combination of Lenco and MotorGuide.  Here's a web site.  It's been on the market for a few years but has not had a large acceptence as a trolling rig for larger boats (what it's been marketed for).
Here's a small boat that uses dif. thrust for steering with under mounted motors.  I know these guys and have played around with one of the boats.  It'll turn 180 in it's length.

One  wild thought I had a couple of weeks ago was to build a smallish wooden boat, put two motors on it, and not put a wheel on it at all.  The steering would be accomplished strictly by differential thrust.  One thought was to possibly use a microcontroller to watch a joystick, and drive the motors based on the joystick.  The motors could be mounted entirely under the hull, though I'd probably still want a "kick up" option in case the boat ever needed to be beached.
 
Not sure how practical this is.  But if it could be done with two trolling motors, each with a Torqeedo prop, then at least it wouldn't cost a fortune to try.  The next question would be where to get transistors that could switch up to 50A???  :)

That's great to hear!!  (though maybe we should wait and buy up several props before word gets back to Torqeedo that their prop on a $500-$1000 motor would work "good enough" to avoid spending $3500 on a Torqeedo....)
 
What size boat do you have?  (length, beam, weight)

I'm experimenting with a torqeedo prop on a 24V Motor Guide now.  I have not taken any calibrated measures but it seems to push my boat at hull speed with about 25% less throttle.  Photo attached.
