Ric had asked for 48v/100ah Li options for his boat (not the OP with the Kayak) so I provided info about one such option. 'Roll your own' and 'less expensive' is not always the best choice when talking about marine Lithium packs. Some users have the capabilities to assemble and manage such a pack, most do not and would be much happier and safer with a consumer grade product.
I have a great many of these POWER 26-104 batteries out there in the field (some approaching 2 years now in commercial applications) and they are performing as designed.
