Most of comments everyone has said about this project are insightful. I would also add a question of the use of the system as a trolling motor. 3hp motor will give you the power to do the 2.5 knots you are looking for but I would think you would want more. You may encounter currents and wind and will need more power to maintain your trolling of to keep you in position. Additionally as a single screw boat, the "get home" character of an electric motor should also be considered and moving the boat at 4+ kts is likely a good speed.
I ran the boat through our projection software and can see pushing the boat up to about 4.5 within the high end of your 5kw generator. As others have said there will be loss due to the conversions and using chargers or power supplies to get to a DC battery bank. With a 400AH battery bank we are also projecting over 15 hours run time at 2.5 knots.
The projections accuracy is impacted by the nature of your hull and running gear. I would have our propulsion engineer run his model with additional boat characteristics to get a more accurate projection.
