Look in the file "Building a Javelin.pdf" for a simple conversion job. The Javelin installation is only 3/4 horsepower, but the same setup would work for higher powers, just need switchgear and cables rated for more amperage, or use higher voltages, the Javelin is 12/24 volt.

Thumb rules indicate about 1 horsepower per ton of displacement to reach nearly hull speed, of course this is with a reasonably efficient propeller setup. I would think about 1-1/2 horsepower would be good for your boat, 24/48 volts (4 x 12 volt batteries) with a large slow speed prop, preferably 18 - 20 inch diameter at around 400 RPM.
