You might want to invest in one good size Lithium Battery. Forget the switch, keep it simple.
You could look at electric bike/scooter websites. They have reasonably priced 12V lithium batteries. They weigh a lot less, can discharge down to 20%, Charge faster, can be cycled over a 1000 times.
On a 10.5 ft boat, weight is a big issue. And if you calculate the long term cost, the lithium will be cheaper. Plus you could easily carry the battery, vs lugging big lead batteries around, on and of the boat...

But if you go lead, go with Deep cycle. Depending on how long you need to motor and how fast will determine sizing of the batteries.

Solar -  I would not get a harbor freight. I would spend a little extra and get a top brand like kyocera. And get a mppt charge controller. Not sure how much power your trolling motor uses, but the 30lb Minn kota uses 400 watts, so you could try and put 400 watts of solar on your boat, and then you could go as long as there is sun.

It is a matter of how long you want to motor. If you need 2 hours of motoring, one 100 amp 12v battery and 100 watt panel will cover you. But if you want 8 hours of motoring, you need to bump things up.
I would go with more solar, so you have unlimited range.

Your better off connecting them in parallel. They will last longer that way.. The lower the battery gets the faster it discharges.

I have a 10.5 ft FG catamaran I have a 40 lb thrust trollingbrand new sitting here, I am thinking 2 batteries to a switch, #1-#2 -Both and off. Go out on one and as it dies, turn around and head back on #2. Figure going to both will give a final push.  I was thinking of adding a 100W solar kit like from Harbor freight.

I don't know. Sailing I could tell you.. building FG too but Electric power am a complete novice.

Looking at a pair of 12V.. from walmart online

I also have a 9.8 HP outboard but with all the sun in Central Fl. Solar electric is appealing
