Appreciate your desire to keep with Vista, but I wonder if Ubuntu might work for you. Moserial is a communication program designed to log the data from a serial port. Linux has many device drivers already in the kernel so it is likely one of your now many USB to serial adapters will work with it. Then you can use the installed OOo spreadsheet to make sense of your data. You can dual boot and not loose your ability to use your Vista. All is open source so you won't be out anything giving it a try.
You could load it up in an old laptop and dedicate the laptop to record your data. If you use a smart phone or tablet, it is likely you are familiar with a cut down version of Linux already.
