The best way is to install a battery monitor like the E-xpert Pro or Cycle Analyst and others. These meters track the actual voltage and current coming out of your battery bank, translate that info into Ah and can be used as an accurate fuel gauge.
The problem with trying to use the traditional method of relating battery voltage to state of charge is that the voltage to state of charge chart depends on a resting battery. Under virtually any load, the voltage will read lower and not be a good indicator of your remaining charge. The newer battery monitors have sophisticated algorithyms that can compensate for battery type, including Peukert Effect.
