I like the 3.5 knots for your boat, that motor and a 48v system. Here's what I know based on the information you gave me so far.
1.) That motor needs to make 3kw cont. for it to propel your boat 3.5 knots.
2.) In order for that motor to make 3kw's at 48v, it needs to spin 3,000 RPM.
What was the diameter of the prop you were planning to use?

sweet spot 3.5 - 3.7 knots
48 volt system
Although the boat has a hull speed of 6.4 knots based upon some preliminary calcs I've run using prop equation, 10" pitch allowing for 50% slippage.
At 1200 prop shaft rpm- 5.6 knots
At 800 prop shaft rpm-3.7 knots....
