The 5kw kit will work fine for that boat, though there is no disadvantage whatsoever going with a 10kw or 12kw motor.
Your bank size will depend on how much range you need. If only for docking, then 4 group 27 12v batts in series will do nicely. In fact, you might even get by with a 20AH 48v e-bike battery! I recently motored 6 miles (at about 1kt) on one, in my 7600 lb 27 footer. If you might ever want to motor for several miles in open water, you will want a more serious bank. 48v and 200 to 350 AH would not be excessive. Remember that with flooded cell lead-acid batteries, you don't want to discharge deeper than 50% or you can significantly shortten battery life. LiFeP04 batteries can be discharged more deeply and typically last longer, but of course they cost a lot more. Cheapest on my side of the Atlantic is 6v golf cart batteries. These are serious deep cycle batteries made specifically to be jostled around a lot, and sold against a lot of serious competition for lowest price. My bank is 3 years old and holding up nicely, and I anticipate getting well over 5 years use out of them. The price was something to smile about, too.
As for regen, you won't get much out of a 26 foot boat. It just doesn't sail fast enough. And you will get none at all with a folding prop. You can always switch later on to a fixed blade prop which is likely to be more efficient, but for now your folder ought to work okay. Under sail, with a fixed prop, it is common practice to open up the throttle just enough to turn over the prop so that it produces no drag. About an amp. For a day trip or even an overnight passage, this is doable. With the folding prop, just let it fold and don't bother turning the shaft.
Make sure your kit uses a sine wave controller rather than a square wave controller. I switched, and it is quieter and more efficient.
Since that kit uses a belt reduction drive, you can always experiment with different pulley sizes later, after you get the system installed and operating. Can't do that with an enclosed gearbox.
