I believe you should use the same size to connect the batteries also. This is not a big deal, since they will most likely be right next to each other.

The size wire is determined by the length (Round Trip) and the amps. You know your Max Amps is 310 Amps. So the closer the battery bank is to the motor controller, the smaller the wire size.
For connecting the batteries, you can also use copper bar, and drill a hole for the size of the lug. Put heat shrink tubing over the bar to insulate it, and some kind of lug cap. The cross-sectional area of the bars should be greater than or equal to the appropriate gauge of conductor that would have connected them. And make sure they are insulated and covered well.
Or you could make wire connections, but copper bars seem cleaner to me.
There is no downside for going with the recommended size or larger, except cost.

Getting ready to rig up my motor, batteries, controller in the garage.
Want to make sure I know what I am doing and have all the right parts
before crating it all up and shipping to the boat.

motor be sized for say 350A? Or is that overkill?

Looking at a standard gauge chart, it suggests "500" for 380A. This
stuff is $8/foot! Are there battery lugs available for this size cable?

I basically understand that thicker cable has less voltage loss,
therefore less heat, and more efficient. Is there any downside other
than cost to going as thick as possible?
