The simplest way to do this is to just lock it down so it points to the stern. Your rudder will work well enough. Sure, it does steer as well as getting to use the vectored thrust of the outboard but my experience is that it's good enough and that either managing 2 tillers or dealing with extra linkages is to error prone in a pinch.
