Most small sail boats use an outboard with the throttle on the tiller. The motor is pointed straight ahead and you steer with your existing helm.  The tiller handles points up so you can lean down to reach it to adjust the revs.

Many outboards have or can be fitted with remote throttle/steering.  You will want to get a setup like that.

I guess I need to clarify.  I am planning to install an inboard electric motor and LiFeP04 battery system on my sailboat, but I am considering putting a gas outboard on the existing transom mount as a backup.  My original question, restated is this: If you have a transom mounted outboard, how do you steer it or control the throttle? It's a newbie question because I'm a newbie to sailboats.
