My boat is approximately 3200 lbs 
I have seen the torqeedo motors in action and I like them the are proven and we'll made. I had and inexpensive trolling motor prior to my inboard conversion Wich was just a little under sized for my boat but always got me back in. Thrusts was 60 12 volts . 
I would guess 60 lbs thrust would work for you. But the way I am I like a factor of safety so I would think 80 to 100 lbs thrust for your boat would be good.  For me I'm drawing 30 to 40 amps for hull speed in 3 to 4 knot area. Thats with knowing the voltage is 48 you can may be scale what you requirement are as gainst what the numbers I got
