"or at least add a knot or two while under sail?" - incorrect - "diminishing return"
if you were sailing along at 3 knots the extra 600W solar would bump you up to about 3.8 knots
if you were closer to hull speed at 4.9 knots the extra 600W would only get you to about 5.2 knots.
