Thanks to all of the comments.  I have some cool ideas now.  I have not yet talked to MinnKota tech support, I have looked into some other options too.  The Turbo head off a MinnKota foot controlled unit is a direct swap out on the shaft for the twist control head.  I plan to wire the drives to a circuit board and breaker.
 
Originally I wanted to use a Joy stick controller from Lenco's trolling tab kits, however at $1100 is a little pricey. 
 
I thought I would take two foot controlls and dissasemble the speed knob assembly from them and mount them into the dash to control the variable speed. and then use one of the foot pads as a hot shoe to change direction with a forward and reverse on off switch to control both drives from a single activation.
 
This is on a 15' Procraft Bass boat with a low draft, so the drives should propel the boat quite well for our 10hp limit lake.
 
Anything come to mind that I need to be aware of?
