Floating ground is fine if all systems float. If however you try for a fareday cage you will want to ground everything to a common ground. You can install a grounding plate on the outside of the boat for all grounding

I'd follow the guidelines set by traction vehicles, not boating standards they seem a bit behind the eight ball. In that regard the DC pack voltage should just float and not be grounded, IMHO. I'd be very nervous having any part of the high voltage (48v and up) tied into any other part of the boat. Let it float and use some variety of ground fault detection (breaker, Bender circuit etc) to detect any shorts to other parts like ground on the vessel. Its how EV cars work and keep people safe.
