Using multiple props is way less efficient. 
Those trolling motors are around 400 watts, I believe, so very underpowered. Their prop is super inefficient.
I'll give it to you straight, it's a very bad idea : )
Get a thunderstruck kit, it is the best solution for your boat. 
It's a proven way to go. 
You are trying to power a full size car with 2-4 moped motors. 
You already have the prop shaft, prop... it is a drop in system. 
Those trolling motors are great for a canoe. I use a minn kota trolling motor on my canoe, it works great, but not very efficient. The main benefit is that it is cheap.

I would tend to agree with the other posters and suggest pulling the old "atomic bomb" out and replacing it with an electric of similar horsepower.  That way you're following the same thrust lines of the original engine that the boat was designed for.

Good luck!  Please send photos of the install as it goes.  I sail my Kirby 30 on Lake Ontario and am in the process of replacing my Yanmark YSM 8 with a Thunderstruck 10Kw kit.
