This would not be more efficient. One large prop is more efficient.
I would look into a torqueedo or Chinese electric outboard, if you want an outboard.
I would recommend just using an inboard electric motor, like thunderstruck kit. Outboard would come out of the water in waves.

That's a really good reference - same idea, roughly 1/4 the power and 1/4 the displacement.
Curious what conditions you could get 4 knots in - glassy smooth or blowing, or both?
