Can you clarify a bit? Are you having trouble finding an approproiate potentiometer, or are you looking for help designing/building/obtaining a mechanism to rotate the pot and do the fwd/rev switching? I've never seen a "center off" pot, but if you're building a cam/switch mechanism to control the fwd/rev relays it would be simple enough to add another microswitch or two to electrically reverse the pot rotation when shifting direction.
