My gauge will read 0% remaining when there is 32Ah left. The gauge continues to track with the percent remaining going negative. The Ah consumed since last full charge will continue to increment as normal.
There is still plenty of visibility into what's left in the pack. Of course, I could change the meter to read to the full capacity like you describe. It would take me about 2 minutes, less if I use the manual. But I prefer limiting my full/empty gauge to something that doesn't put my batteries at risk. The rest of the capacity is for emergencies only. I guess that it is a matter of personal preference.
