If you put 5kw of load on the genny, that's 5kw not available for
driving the boat.
Disconnect the generator from it's load, that's 0kw being consume, thus
0kw being generated and now it's not stealing anything from propelling
your boat.

5kw is the maximum load you can draw from that motor as a generator.
That doesn't mean that it presents a 5kw parasitic load at all times
even if you are not using any of the power. If the only thing connected
to it normally was a charge controller that ran at 1kw, 1kw (+ a little
to cover losses) would be the maximum it would 'steal' from proposition.

The great thing about electrical systems is that they DON'T have to run
at 100% load all the time. And also electrical systems can often have
short term ratings, so you can safely overload the system for short
bursts - hence motors often having 5 minute, 1hr and continuous ratings,
and the 5 minute rating might be double the continuous.
