The controller quitting at 100 amps makes sense, because that motor shouldn't at that level.
I'm with you about the 2 to 3 knots thing. It's about taking your time and relaxing and if you can get around at 2 to 3 knots just using 5 amps, that's great.
The idea of using an oversized prop with the sole intention of going 2 or 3 knots is actually sound thinking, to a point.
If you end up changing the prop and still are thinking 2 knots, 200 RPM and as close to 5 amps as you can, try 12" diameter, 15" pitch. That would be interesting.
