You can set the wheel diameter in the Cycle Analyst and get the RPM/10 quite easily using one of the Hall inputs from the motor encoder, provided you're using a brushless motor. If not, there is a reed switch provided with the Cycle Analyst which will need to be mounted on the prop shaft. You will then need to fasten a magnet to the shaft to trip the reed switch.

The Cycle Analyst has proven to be very convenient, especially the second screen showing amp hours used, current draw, real time output, and battery voltage. I build them into Budd boxes from Allied, using a clear top with the CA mounted inside. The box can also the speed and power controls, as well as other small gauges for motor temperature and individual battery voltages if you have a weak cell in the string, for example.

If you want to be really pro, go to www.sealingdevices.com, and order up a Gore vent for your enclosure. The vent will allow water vapor out, but prevent it from entering the box. It also keeps the box at atmospheric pressure, reducing wicking in the control cables. I use these vents in my motors and controllers, and can wash down the motor housings without any fear of liquid intrusion. Used in the motor, they keep grease in the bearings, and keep neutral pressure on the rear seal. The Gore vent resists 4.3 psi of pressure, about ten feet of submersion. The plastic ones are weak for anything which will experience abuse, so shell out for the stainless version for anything above deck.

Take a look at the cycle analyst from ebike.ca.  They have a large display unit, and an external shunt, high current version.  It even has a speedometer which accepts on/off pulses to measure speed, if you could figure out a way of getting that to work in the water, you would even get watt hours per mile measurements on the fly!
