Welcome Shaun. You'll find much in past messages, much in the links. Your boat is a little big for the $200 pre-made electric outboards (trolling motors), but perfect for the new Torqeedos. If you want to make your own, the Etek is a popular choice. Marginal, depending on your needs, is the new Briggs & Stratton 3hp (150# thrust) outboard for around $1,800 USD, though I've never used one. If your boat was ever an inboard, there a many popular relatively inexpensive systems.
If you paid yourself to develop an electric outboard, it should cost ten thousand to fifty thousand dollars, depending on your existing knowledge level. It is a simple concept, but much work.
Most important is your intended use. If you want to motor against the wind or current for more than 1/10th mile, your Honda 8hp gasoline motor is nearly perfect for the job. If you want to sail with a minimal pollution footprint, go electric.
